Have an Udi-ful Thanksgiving ~ Gluten Free

It’s been a year since I did a die-hard gluten free diet for over a month. I’m not doing a full gluten-free diet any longer, however, I am conscious limiting gluten.

Udi’s baked goods completely saved my diet when I was 100% gluten-free. I tried many gluten-free substitutions and could not stomach them. But Udi’s breads, I really liked, to the point I still buy them even though I’m not on the strict diet!

They taste good and have good texture (a different texture, to be sure, but still good). It’s honestly the closest thing to “real” bread (bread with gluten!) that I have tasted yet (and you know me, I am always trying out the newest, latest things!).

I was excited to hear Udi’s just came out with gluten free dinner rolls and French baguettes! MMmm! I love bread with dinner! (not available in my area just yet!).

Instead, to share some Udi-goodness, I picked up a few other Udi’s treats – Cinnamon Raisin Bread (yummy toasted!) and Double Chocolate Muffins!!

If you’re gluten free this Thanksgiving, I whipped up a couple treats you should try:

Gluten Free Cinnamon Raisin French Toast

  • 4-6 slices Udi’s Cinnamon Raisin bread
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp sugar
  • 1/2 tsp cinnamon
  • sprinkle of nutmeg

Mix all the ingredients except  the bread. Then soak the bread lightly in the egg mixture, and cook on a griddle! Top with whipped cream and syrup if desired!

Gluten Free Death By Chocolate

  • 1 pkg Udi’s Double Chocolate Muffins
  • 1 pkg instant chocolate pudding + 2 cups milk
  • Whipped cream
  • Toffee crunch candies

Prepare instant pudding and let set. Chop up the muffins into cubes. Layer muffin cubes, pudding, and spoonfuls of whipped cream into bowls or parfait glasses (or get a big trifle bowl and do the whole thing in there!). Sprinkle with toffee crunch candies. So yummy!
