Red, White, and Blue Quinoa Breakfast Salad Recipe

I love to celebrate holidays with a special breakfast. The irony here is that I am totally NOT a morning person so… often I leave hubby holding the bag, er, pan.

But this 4th of July I have a great idea! A pre-made breakfast “salad” with all the colors of fireworks!

Quinoa breakfast Salad

I imagined up my Red, White, and Blue Quinoa Breakfast Salad after seeing the cool tri-colored quinoa sent by Shiloh Farms.

A make ahead breakfast salad to enjoy any time of year (but especially fitting on the 4th of July)
Ingredients
  • 1 cup tricolor Quinoa
  • 2 cups water
  • 1/4 cup raw walnuts, chopped
  • 1/4 cup dried cranberries (soaked, optional)
  • 1/2 cup fresh blueberries, rinsed
  • 1/2 cup plain whole milk yogurt
  • vanilla extract
  • honey
Directions
  1. Rinse quinoa and put in water to boil. After water comes to a boil, reduce heat and simmer about 15 minutes or until tender. Remove and fluff.
  2. Whisk together yogurt, honey and vanilla extract to taste.
  3. Assemble salad by placing a scoop of cooked quinoa (warm or cold) into a bowl. Drizzle with honey.
  4. Top with walnuts, cranberries, and blueberries.
  5. Drizzle honey-vanilla yogurt over all.

I personally prefer this salad a bit warm with the cool yogurt and berries on top. Delicious!

The tricolor quinoa, raw walnuts, and dried cranberries are all from Shiloh Farms, a wholesome, healthy and organic food company based out of Lancaster, PA. With 30 years in the all-natural and organic food industry, Shiloh farms offers an extensive line of USDA organic-certified flours, cereals, grains, dried fruits, nuts, beans, cheeses and sprouted grain breads.Quinoa breakfast Salad

Shiloh Farms recently introduced a line of certified* gluten-free line of more than 30 products, ranging from lentils, to flour, dried fruit, nuts, seeds, coconut sugar and allergen-free chocolate chips with most of them USDA organic certified. *gluten-free products that haven’t been processed and packaged in a certified gluten-free facility risk cross contamination with gluten – even if they’re naturally gluten-free.

I’ve just delved into my Shiloh Farms samples, and each one has had superb and fresh flavors! I can’t wait to share more ideas for sensational summer salads I create with the beans and grains I received. Plus I’ll whip up some gluten free baked goods too! I’m excited to experiment more with their foods (and hopefully have a coupon code for you soon!).

What kinds of breakfasts do you enjoy making?

This is so nice. We haven't had quinoa in a while, I forgot all about it. I'd love to try this!
