Every Friday is Pizza Night!

To bring some order to our life, my menu planning involves categorizing each night.

  • Monday is Chicken Night
  • Tuesday is Taco Night (or anything Mexican)
  • Wednesday is Pasta Night (of course!)
  • Thursday is Leftovers Night (which I hate!)
  • Friday is Pizza Night!

Pizza night is our family favorite. It’s the start of the weekend. Dinner is more relaxed. We get be creative (I try to plan ahead and have fun toppings).

Last week, we did pizza with a twist! I was browsing through the Birds Eye Kids’ Recipes and saw the Green Monster Pizzas! My mom used to have us make those ALL the time when we were kids – how perfect!

I love that these pizzas are already kid-sized, plus very easy for a toddler to make.

I set our son up at his tower with all the ingredients. (I forgot the bagels so we used English muffins). He’s very used to making the big pizzas with Daddy, so this was an easy recipe for him.

You could say I am a HUGE fan of Birds Eye frozen veggies – my upstairs freezer is almost ENTIRELY packed with their steamfresh bags. I love having a ton of frozen vegetables on hand to make meals easier.

Every night, I ask our son to open the freezer and pick a vegetable for dinner. I tell him what’s in the bags, but one night he insisted on Creamed Spinach! Ha ha! I’d been saving that for a Spinach-Artichoke dip but… I figured, hey, let’s try it! At first, he didn’t want to take a bite, but we have a “No Thank You Bite” policy, and after that first bite, he decided he loved it!

For our pizza, we used the bag of Broccoli & Cauliflower (which he calls “green and white trees!”). I picked out just the broccolis (I’d forgotten to get JUST a bag of broccoli – or maybe it’s buried somewhere in my freezer?), chopped them smaller, and let him arrange them on his pizzas.

He’s still learning to use a big spoon to ladle sauce onto the pizza. But he is definitely a master cheese sprinkler at this point.

We had a blast watching our son create his pizzas – I think this is going to be a staple recipe in our home! Plus, the frozen veggies made it so easy to add fun toppings!
