I am blown away by the variety of snack options now available to gluten free eaters. Granola bars, granola cereal, cookies, muffins, chips, breads… There’s something for everyone.
It’s so easy to take ready made muffins and make a dessert trifle. I love how you can make individual cups this way, because our son doesn’t like the walnuts in this dish. Easy enough to leave out of one bowl!

Easy Desserts: Gluten Free Banana Walnut Trifle Cups

A fast, easy dessert that can be layered into a pan or into individual cups!
Ingredients
- 1 package Gluten Free Vanilla muffins
- 4 bananas. sliced
- 1 package gluten-free vanilla pudding mix, prepared according to box intructions
- 1/2 cup coarsely chopped walnuts
Instructions
- Slide all the muffins cross-wise into 1/4″ slices.
- Layer one muffin slice in the bottom of a bowl (or 4 across a pan)
- Spoon a few teaspoons of pudding mix on top.
- Sprinkle on a few bananas and walnuts.
- Repeat, using 1 banana and 1 muffin per bowl.
- Enjoy!

These look delicious! My 5 year old son LOVES bananas so I am going to have to make this for him.
