Everyone has their signature holiday baking recipe at Christmastime it seems. But true to ME, I can’t pick just ONE cookie. I love a lot of holiday cookies. (A LOT!).
However, if there’s one cookie I’ll eat till the plate is clean … it’s pizelle. If you don’t know what pizelle are then… it’s very likely you aren’t Italian!
And. If you’re not Italian, it’s pronounced peeTZ-elle. Almost like you’re starting to say “pizza.” And in fact, these do have a pizza shape!
Pizelle are thin, round, decorative cookies made in a special pizelle iron tool. It’s much like making waffles, but they cook faster.
I love dipping them in my coffee (and just wait till tomorrow when you see what else you can do with pizelles!).
I’m not going to put the recipe here because it really belongs to my pizelle iron maker, but if you make pizelle, you’ll have an iron. And if you have a pizelle iron, the recipe is inside. Suffice to say it’s pretty much eggs, butter, flour, and flavoring. Yum.
Almost yum. Wait. Before you cook on that pizelle iron, you’ll want to brush it with oil to prevent sticking. And this is important: use a flavorless, light oil!!
If you don’t use a good oil, you’ll taste it on the pizelle. Pizelle are delicate so they pick up flavors from the iron. To keep my pizelle flavor sweet and light, I used the LifeOiL natural oil blend I received for review last month.
Holiday Baking with LifeOiL

I’ve discovered using the right cooking oil really matters, and especially for light and sweet holiday baking.
When you’re sauteeing and baking especially, which are my two favorite ways to cook. Both saute and baked goods can have their flavors altered (dare I say, ruined!?) by a heavy oil that has a “taste” to it (even if the taste isn’t bad!). For instance, straight extra virgin olive oil is great… if you’re making a salad, or dipping bread, or making pasta sauce.
For baking you’ll want something lighter. I promise!

I make pies during the holidays, Chocolate and Pumpkin for Thanksgiving and Chocolate and Lemon pies, cookies and fudge for Christmas!
