We love smoked meats in our house – but getting out the smoker is a full-day affair. So when we want yummy pulled pork without the hassle, we have a little trick – we use our mini crock pot to cook down the meat all day – it doesn’t have as much smokiness, but the texture and flavor is much the same!
And, with Udi’s Gluten Free Hot Dog and Hamburger buns, we’ve taken the “Fill-the-Bun” challenge and made our Pulled Pork Sandwiches a little healthier and wheat-free!
Udi’s uses no preservatives in their breads, and to me, they make the best gluten-free bread I have found yet! The texture is more kaiser roll-like than typical squishy burger bun, but I think this gives a better contrast to the filling!
Gluten-Free Pulled Pork Sandwich Recipe
- 2-3 lbs Boston Butt pork cut
- 1/2 cup All-Purpose Paprika-based Dry Rub
- Prepared Coleslaw
- Jar of Banana Peppers
- BBQ sauce
- Udi’s Gluten Free Whole-Grain Hot Dog or Hamburger Rolls
- Rub the pork meat with the dry rub. If it doesn’t fit in a small crock pot you can cut it into smaller pieces and rub each piece.
- Turn the crock pot on low and cook for 6-8 hours until meat is tender and falling apart easily.
- When meat is ready, fork-separate and add a little BBQ sauce if dry.
- Toast Udi’s buns in oven/toaster until slightly crisp on the outside.
- Pile on the pulled pork. Add a few tablespoons of coleslaw. Layer on sliced banana peppers.
- Add more BBQ sauce to taste.
- ENJOY! And have napkins handy!

We make our own dry rub mix and store it.
We used Udi’s Gluten Free Whole Wheat Hamburger Buns, but you could easily use the Classic or the Hot Dog rolls to create the same type of sandwich.
The Udi’s buns were a new addition for this round of sandwiches, and I think they held up nicely to the sloppiness of the pulled pork meat! As with most gluten-free breads, they tend to crack a little easier than a typical burger bun. I think the toasting added a great texture, and also helped the bun hold its shape!
