Since we’re always visiting one set of parents or the other on Mother’s and Father’s Day, we usually celebrate with each other beforehand.
Last night, I made a grand Father’s Day dinner – well it looked grand to me, but really it all came together quite easily when grilling is involved! One reason I like grilling is for the generally quicker cooking time, and you’re not heating up the whole house!
Here’s our Father’s Day Grilling Menu:
Sweet Potato Tortilla Chips with Pineapple Salsa
Teriyaki Salmon Burgers
Grilled Vegetables
Mahi Mahi Skewers
Rice
Panzanella (Bread salad – recipe below!)
Fresh berries and cream
I had a little help from Whole Foods Market planning and prepping this Father’s Day Grilling menu. As I shopped for our dinner, I was impressed once again by the variety of ingredients in their 365 Everyday Value line of products!
Whole Catch® Wild Caught Seafood Burgers (in Mahi Mahi, Yellowfin Tuna, Alaskan Salmon) make grilling prep easy (hubby enjoyed these!). I also made marinated grilled fish with Whole Catch® Wild Caught Fillets – available in Sockeye Salmon, Mahi Mahi, Turbot, Monkfish. My favorite is the firm but mild Mahi Mahi, which does well on a skewer or shredded into fish tacos!
I had a hard time picking from all the delicious seasonings and sauces at Whole Foods. We used 365 Everyday Value® Spice Shakers Everyday Seasoning for the veggies, and 365 Everyday Value® Organic Sauces in Teriyaki and Soy Ginger for the fish.
A side of Panzanella (bread salad) provided contrasting flavor points with the bite of raddicchio and tang of fennel. Whole Foods Hearth Bread made chewy, delicious croutons! (I also tried my own toasted Polenta croutons – also good!). 365 Everyday Value® Organic Dressings Lemon Tahini was a great match for the seafood.
Don’t forget your seasonings! Whole Foods Market™ Salt Tubs – Sea Salt Cypriot Flakes, Sea Salt Fleur de Sel or Murray River Salt – are perfect for finishing.
Add a special fizzy drink like Whole Foods Market™ Italian Sodas, or their limited time 365 Everyday Value® Organic Watermelon Lemonade! I think a special drink always helps add to a holiday meal!
For dessert, I didn’t want to overthink it. We picked berries out of our garden, and topped with Whipped Cream, and a waffle cookie from the Whole Foods Cookie Bar (yes! like a salad bar, only COOKIES!).
And there you have it. A Father’s Day Menu perfect for the grill! The best part is the salad and skewers can be made ahead and the seafood burgers are already made, so on the day you just throw meat and veggies on the grill, start up the rice cooker and set the table!
Panzanella – Bread Salad Recipe
Adapted from Bon Appetit April 2014
Ingredients:
- 1 small bulb fennel, sliced (alternatively, you could use celery if you want a milder flavor)
- 1 bunch kale (or other hearty lettuce like raddicchio), torn
- 1 mild onion (like a shallot), diced
- 10-12 olives – green or kalamata,halved
- 1 lemon, zested and juiced
- 1/2 loaf hearty bread or package of polenta
- olive oil
- red wine vinegar
- salt and pepper
