I admit, scooping pineapple onto my cottage cheese has always been my go-to topping for this protein-packed superfood. But it’s time I got way more creative, don’t you think!!? Like… a Sweet Potato Apple Breakfast Bowl!! I just love the blend of sweet potatoes and apples – it speaks “Fall” to me in somewhat the same way pumpkin-everything works for the rest of the world! Ha!
This summer I shared with you my Pineapple-Melon Smoothie (see!? I couldn’t yet break away from the pineapple! It’s just such a refreshing flavor). But this month when Friendship Dairies, makers of The Original Superfood, asked me to use their Superfood Generator tool to come up with another mix-in recipe, I vowed I’d go out on a limb.
That’s right. I turned immediately to the “savory” ingredients. Okay… there’s a LOT of foods you could mix in to cottage cheese. The list goes WAY beyond fruits and into the veggie family. YES! Cottage cheese is so versatile, and can really be mixed with just about anything if you’re brave enough. Corn, Onions, Peppers, Peas, even Asparagus! Well… I wasn’t brave enough to try those, but I did find a veggie I thought I could like: Sweet Potatoes!
Like I said, sweet potato + apple. It was a no brainer. I already knew those two taste good together from my apple crisp recipe here. But… raw!? I wanted to find out.
Friendship Dairies just relaunched their website, and let me tell you, it’s chock-full of recipes and tips to help you get creative with cottage cheese. It’s like the blank slate you need to create a delicious meal! Just go to their Superfood Generator and whip up some interesting dishes.
What’s the Superfood Generator?
The Superfood Generator gets you started with ingredients you can select to mix and match your recipe. Then it will even give you a lovely photo result of your recipe and inform you what kinds of vitamins you’ve just packed into an already powerful dish. You can even sort the ingredients by nutrient or benefit, like if you’re trying to add more fiber to your diet, or eat foods rich in antioxidants.
Using the Friendship Dairies Superfood Generator tool, I played with a few combinations, and eventually decided to go with something that was sorta apple/pumpkin pie feeling. I chose a different cottage cheese this time – the Whipped 1% Cottage Cheese. It was so light and airy – I usually like a more full-fat cottage cheese, but the smooth texture of this variety made me not even notice it was lower in fat.
Oh, and let’s not forget how high in protein cottage cheese is! With 15 grams of protein in the 1% variety, it’s a meal in itself! Now, mixing in all those savory spices and veggies could actually place cottage cheese on the dinner menu. But because of the long-lasting energy it gives me, I prefer it earlier, like at breakfast, to help me go all day long.
Here’s my Sweet Potato Apple Breakfast Bowl Recipe
- 1 cup Friendship Dairies Whipped 1% Cottage Cheese
- 1/4 small sweet potato, peeled and grated with a microplane grater
- Maple syrup
- 1/2 apple, core removed, sliced into matchsticks
- 1/8 tsp each cinnamon, nutmeg, ginger, blended
After prepping the food, place the cottage cheese into a bowl and make a little indent into the top. Layer in the shredded sweet potato. Drizzle some maple syrup over. Stack up the apple matchsticks. Sprinkle the spice blend over all to your own taste. Give it another drizzle of maple syrup!

Okay I know, that’s way more than 3 ingredients, but… spices! You have to have some spices!! Also… it certainly looks pretty like this, but I have to tell you, the taste is MUCH better after you mix the whole bowl up so the flavors get dispersed throughout the cottage cheese. The photos just aren’t that pretty though so… you get the pretty version!
