Cinnamon Tortilla Cookies

Ingredients
  

  • 2 large Flour Tortillas
  • 1 T Butter, softened
  • 1 T cinnamon sugar

Method
 

  1. Preheat oven to 350 F.
  2. Place the tortilla wrappers flat on a cutting board. Lightly spread the wrap all over with butter (I used an offset frosting spatula which worked so well!).
  3. Using cookie cutters, cut out whatever shape you desire! I cut out stars, candy canes, and gingerbread men. It's helpful if your cookies are all around the same size so they bake evenly.
  4. Lightly sprinkle the cut-outs with the cinnamon sugar (you can do this before or after you cut out the shapes, but flour tortillas will be tougher than cookie dough so it can get really messy if you cut out with the sugar on).
  5. Transfer your cookies to a cookie sheet.
  6. Bake for 5-7 minutes or until cookies are stiff/crunchy but not burnt.
