Preheat oven to 400° F.
Line a baking sheet with parchment paper or a silpat mat.
In a shallow dish whisk egg until well combined.
In a separate shallow dish combine almond flour, flax, paprika, and dry mustard.
Slice cod fillets into strips about ½”-1” wide.
Roll in almond flour mixture to coat.
Roll quickly in egg mixture.
Finally, roll in almond flour again.
Place coated fish on prepared pan.
Bake in oven for 10-12 minutes until “breading” is golden brown and fish flakes.
Remove from oven, allow to cool slightly before serving. Or, story by placing in an airtight container in the freezer to reheat in the toaster oven later!
