Method
- Preheat oven to 350.
- With a mixer, beat oil, applesauce, sugar, eggs, and vanilla until smooth.
- Mix dry ingredients well and add to wet ingredients. (Save chia and zucchini out for next step).
- Fold in zucchini and chia seeds.
- Pour into muffin tins (greased or lined with cupcake liners).
- Bake 18-20 min or until tops spring back/tester comes out clean.
