Zucchini Chia Seed Muffins Recipe

Easy and sweet - these energy-packed muffins can be a quick breakfast!

Ingredients
  

  • 2/3 cup coconut oil
  • 1/3 cup applesauce
  • 2 cups brown sugar Brown sugar adds a bit of nuttiness. However, it makes the muffin less sweet. If you like a sweeter muffin, try half brown and half white sugar.
  • 3 eggs
  • 1 T vanilla extract
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 T cinnamon
  • 2 cups zucchini, shredded
  • 1/2 cup chia seeds

Method
 

  1. Preheat oven to 350.
  2. With a mixer, beat oil, applesauce, sugar, eggs, and vanilla until smooth.
  3. Mix dry ingredients well and add to wet ingredients. (Save chia and zucchini out for next step).
  4. Fold in zucchini and chia seeds.
  5. Pour into muffin tins (greased or lined with cupcake liners).
  6. Bake 18-20 min or until tops spring back/tester comes out clean.
