National Grilled Cheese Month: Grilled French Onion Soup Recipe

This post about delicious grilled cheese sandwiches is brought to you by Udi’s Gluten Free!

I love grilled cheese! It’s totally comfort food. I prefer mine with cheddar. Sometimes American. A slice of (ripe!) tomato is tasty.

However, this month, Udi’s Gluten Free sent me a big box of gluten free breads to try out and encouraged us to participate in National Grilled Cheese month. So…. I couldn’t just do same-old, same-old!

I came up with three unique (I think!) versions of grilled cheese. I’ll post a new recipe each day this week so … get your tastebuds ready!

Today, I bring you what I think is my MOST unique recipe yet: Grilled French Onion Soup on Udi’s Gluten Free Whole Wheat Bread!

I honestly don’t know where I come up with these things. But I LOVE French Onion Soup so I thought – why not grill it?

National Grilled Cheese Month: Grilled French Onion Soup

Taking a delicious soup to the grill!
Ingredients
  • Udi’s Gluten Free Whole Wheat Bread
  • Swiss or Gruyere Cheese, sliced thin (very thin)
  • 1/2 sweet onion, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 T butter
  • salt
Instructions
  1. Lightly butter one side of two bread slices.
  2. In a saute pan, melt butter and layer onion slices. Sprinkle with salt.
  3. Saute over medium heat until onions are soft and brown (caramelized, but not burnt). They should be sweet.
  4. Lay one bread slice, butter side down, on the grill pan. Place two thin slices of Swiss cheese on the bread.
  5. Layer on some caramelized onions.
  6. Add another cheese slice.
  7. Top with remaining slice of bread.
  8. Grill until toasted to your liking
  9. Enjoy!
Notes
Onions can be made the day ahead if needed.

I love how crispy Udi’s Gluten Free breads get when toasted. And, Udi’s breads are all natural without artificial flavors, colorings, preservatives or other synthetic additives! Even better, right?
