National Grilled Cheese Month: Grilled Mediterranean Sandwich Recipe

This post about delicious grilled cheese recipes is brought to you by Udi’s Gluten Free!

And lastly… but not less tasty… is a hark to my Mediterranean roots (Italy).

You could alter this recipe a bit with other Mediterranean foods but this was simple and using items I already had on hand.

A Mediterranean look at the grilled cheese sandwich
Ingredients
  • Udi’s White Sandwich Bread
  • Butter
  • Provolone Cheese, sliced thin
  • Sun dried tomatoes (I prefer dry, not oiled)
  • Kalamata olives, chopped or sliced
Instructions
  1. Lightly butter one side of two slices of bread.
  2. Lay one slice butter side down on the grill pan.
  3. Add two slices of Provolone cheese.
  4. Sprinkle sun dried tomatoes and kalamata olives on top.
  5. Add another slice of cheese.
  6. Top with remaining bread slice.
  7. Grill until toasted to your liking.
  8. Enjoy!

This recipe is super tasty with all the sharp cheese and earthy olive flavors mingling together as they melt and warm through! Mmmmm, delicious!

And that wraps up my take on grilled cheese sandwiches! I think I’ll go make another…. I still have some bread left!
