Eating gluten free has definitely come a long way since I first attempted it over a year ago. There are more options, and they are more readily available! I commend certain local grocery stores and natural foods stores for enlarging their gluten free departments!
One brand you should definitely look out for is Namaste Foods!
For dinner one night, we had Namaste Pasta Pisavera – a delicious dish with Namaste’s own tricolor rice pastas and spice packet. I added chopped fresh tomatoes, black olives, artichoke hearts and roasted red peppers… the overall flavors melded so well and were delicious. I added Feta Cheese on top and it was a fantastic Mediterranean meal!
As with most gluten-free pastas, the texture will not feel exactly the same as wheat pasta, but this pasta was by far the best tasting one I’ve had! I ate leftovers the next day, and it still tasted good (although remember to let refridgerated gluten-free pasta sit out and perhaps add some more liquid as it tends to dry out faster than regular pasta). It tasted great hot for dinner, and then cold for lunch! What a versatile dish!
Of course, when asked what two products I’d like to try from Namaste, I couldn’t resist the gluten free chocolate cake! Preparing this cake was just as simple as any other cake mix recipe. I decided to make cupcakes so I could store them for later, and I noticed that this mix made FAR more cupcakes than I get out of a regular cake mix. I had 28 cupcakes, whereas I typically only get 16-18. The texture was a bit more springy than regular cake, but the chocolate flavor was delicious! I found this cake mix to also be less “sugary,” which I think is a good thing! I’m excited to have these little chocolate cakes to snack on all through the next week. I have also tried the Namaste Blondie Mix, which is VERY tasty if you’re looking for a sweeter treat!
Not only does Namaste provide gluten free eaters 15 baking mixes and 3 pasta dishes, but all their foods are all natural with no GMO ingredients! They contain ZERO: gluten, what, soy, potato, corn, tree nuts, peanuts, casein, or dairy. So Namaste foods are good for a multitude of special diets out there! And while the package itself might be more expensive, pound for pound, many Namaste baking mixes are actually cheaper. For instance, the Brownie Mix is a 30 oz package at $.20 / ounce. Compare that with name brands like Betty Crocker or King Arthur – which come in smaller packages making them $.32 and $.41 / ounce respectively! So it’s a good deal too!
