As moms we all want to give our kids whatever it takes to help them succeed right? That means a good night of sleep, plenty of exercise and fresh air, and of course good food.
Did you know that some foods are even better than others for boosting your child’s brain power? Today I partnered with Jody over at A Sip of Southern Sunshine, who provided this amazing Almond Flaxseed Gluten Free Fish Sticks Recipe. It’s the perfect brain boosting lunch idea for kids!
Besides fish, there’s a whole list of foods that really pack a punch when it comes to feeding growing brains. Whether you are sending them off to school, packing for your weekly homeschool co-op, or feeding them right at the kitchen table these crunchy gluten free fish sticks are a great way to give them a healthy lunch and keep them on the right track for the day.
What to include in a brain boosting lunch?
Fish Sticks – Fish provides much needed omega 3’s as well as vitamin D.
Greek Yogurt Tartar Sauce – The healthy fats in Greek Yogurt are great for healthy brain cells.
Fresh Apple – Apples contain antioxidants that help keep their minds sharp and provide something sweet to keep the sweet tooth for unhealthy snacks at bay.
Walnuts and Dried Cranberries – This quick mix is for a touch of something sweet and a crunch (instead of potato chips). Nuts provide proteins, vitamins, and fatty acids.
Almond Milk – If you are avoiding dairy for yourself or your children almond milk is a great substitute. Just like walnuts, almonds provide proteins, vitamins, and essential fatty acids.
Almond Flaxseed Gluten Free Fish Sticks Recipe
Ingredients
- 1 cup almond flour
- ¼ cup ground flax seed
- 1 tsp. paprika
- ½ tsp. dry mustard powder
- 1 egg
- 3 cod fillets
- sea salt
- ¼ tsp. black pepper
Instructions
- Preheat oven to 400°.
- Line a baking sheet with parchment paper or a silpat mat.
- In a shallow dish whisk egg until well combined.
- In a separate shallow dish combine almond flour, flax, paprika, and dry mustard.
- Slice cod fillets into strips about ½”-1” wide.
- Roll in almond flour mixture to coat.
- Roll quickly in egg mixture.
- Finally, roll in almond flour again.
- Place coated fish on prepared pan.
- Bake in oven for 10-12 minutes until “breading” is golden brown and fish flakes.
- Remove from oven, allow to cool before placing in an airtight container.

These look good and I'm not really a fish person! I've done this with chicken before but this is a good idea and probably better for you.
